I have that exact Pyrex glass casserole "bowl" that's pictured on the card. 😍 Looks delicious – I've always preferred the "diner-style" rice pudding in the little cups, but warm is yummy too!
Rice puddings are very popular in a variety of cultures, wait til you try Caribbean/Central/South American varieties! So good when someone's abuela makes it fresh for you with sweetened condensed milks <3 That's so cool you are exposing yourself to these "new" recipes and expanding your palette as well! I love rice pudding, recently at Costco they were handing out samples of the cozy shack brand but it was still half frozen. Sounds weird but it was actually delicious and similar in texture to soft serve.

Most rice pudding I've seen have some sort of flavourings in them. What you have there is a basic pudding just screaming out for flavourings. Cinnamon, or nutmeg, or vanilla, or all of them. Would be great with lemon or orange zest and lemon or orange sauce. Add fresh berries and serve it cold (refrigerated), and don't forget the whipped cream …. yum!
I've always made it with cinnamon, so good!
My mom made a baked rice pudding growing up that was almost exactly this recipe (in fact, having seen this, I'm sure it was derived from some variant of this recipe), we just never made the meringue. In my experience though, it's also quite delicious chilled.

If so I am so curious to see if the flavor profile was any different. It it an EGGY texture/flavor? I would add a bit of cinnamon & even a slight touch of vanilla (YUM) Hubby prefers his rice pudding warm & I like it cold lol
