* Flour, garlic, salt, cayenne pepper, chilli powder, peri peri salt, paprika, salt, and pepper. * Tossed until evenly coated and couldn’t pick up any more. Then added a small splash of water and mixed by hand. It all got a bit sludgy and then I repeated the same coating process. * This gave a nice double coat, evenly spread straight away, and the tossing meant no naked spots. * No oil needed—plenty of fat to fry themselves!
Baked for 40 mins at 190°C, then 15 mins at 220°C. Flipped and did another 10 mins at 220°C. My oven is slightly on the weaker side so adjust your timings accordingly.
Result: crispy outside, juicy inside, not dry at all. Finished with Orange Buffalo Woof Woof sauce (but didn’t get a pic of them sauced up).

That’s wild that you got them that crispy with no traditional coat method (like using an egg batter to make the flour stick).. it sounds like the water sludges it up just enough to get pretty good coverage? Did you trial and error the recipe or did you go based on something you saw online. Really job well done

I think I finally nailed my oven wings!
