Did my first Smoke on the performer. After using offset smokers for so long this didn't turn out too bad using the snake method. May try indirect next time to compare.

    Looks great! I couldn’t tell if your pan was just there for dripping or did you add water? I’ve been adding water to mine & think it helps keep the temp more stable, but I don’t have data to prove it.

    Looks good! Your last 2 wood chunks were not really necessary, meat would have been long done taking in smoke by then. Save the chunks next time for the next smoke!
