I was very skeptical about the whole blade tenderized situation in Costco meat.

But I’m in this steak era of my life I just couldn’t let the Costco American wagyu ribeye go. I researched a bit and seems like there are more people a year winning jackpot then people got food poisoning from blade tenderized steak. I hope cooking it to medium is safe enough.

I rested it for 5 mins and internal temperature was 142F. I think it should be okay?

But anyways that was one of my best try

  4. Costco meat can be fantastic. i’ve bought excellent rib eye caps and whole briskets from there that were as on par with what i can get from the local premium butcher.

    I’ve never had any problem with Costco steak. It’s always tasted. Good to me. And I can’t vouch for how your steak tastes but it looks good.

    My local supermarket has taken a nose dive in the past few years and a local butcher shop is way too expensive. Thinking of joining Costco just because of the good things I hear about their meats.

    A lot of you guys think I’m shit talking Costco! But no! I’m a big fan of Costco and I do buy other meat from there for ragu and stew! But some fear mongering from social media got the better of me and I was reluctant to try the blade tenderized steak. (They are saying it’s not safe to eat it medium rare since bacteria is pushed into the steak during the blade tenderizing process)

    Now myth busted and I will go back for more Costco steak!

    I’ve eaten alot of their ribeyes, ny strips, filets. Never gotten sick from it. I wouldn’t worry so much about the blade tenderizing. Most of the meat you eat from anywhere has bacteria, that’s why you’re cooking it to temp.

    It’s the same as ground beef. I doubt people are skipping ground beef because of the bacteria being spread within it. I personally rather just continue eating it and take the chance.

    Sam’s club and Costco have some pretty good meat, compared to other grocery stores… unless you are going to a butcher shop.

    Sam’s has Dino Bones.. just have to ask for them in the back. The best.

    Costco has the Meats. I had to research the term “blade tenderized” though, and why it would be an issue.

    I am all for tenderizing a steak by using a jaccard or a needle tenderizer. I was not aware Costco or others were doing this in store. The concern being that if the piece of equipment is not sanitized well enough they could be pushing bacterial 🦠 🥩 into your steak hundreds of times. It must be enough of a concern because they are required by law to label it as such, and recommend a minimum cook temperature of 145ºF (63ºC) for safety.

    Thanks for the insight. I will have to keep my eyes opened for this.

    Try there meat that comes preseasoned like their ribs. So good. I smoke mine on the Traeger Bobby at 225 super smoke for 3.5 hours.

    Bro what? Costco is the shit. I get strip loins and tenderloins from there and break them down into steaks.
