You can see all of the peppers I used in my last post.
I used all of those, a full bunch of cilantro (unpicked), plus about 6 Roma tomatoes and half a red onion, roasted. Plus some leftover confit garlic I had. Something a little different I used was smoked paprika, a good bit of it. Used an emulsion blender, frickin love those things.
Then just added lime juice, salt + pep to taste. Came out pretty good for my first attempt at salsa. Sweet and smokey with just the tiniest little kick from the jalapeños.

We rough chop the tomatoes and simmer them down to the thickness we want rather than use a blender on it. But we like it thicker.
