I’ve eaten a fair amount of Korean food before but only one restaurant near me has this specific dish as a regular banchan. It’s cabbage and a pink radish in a slightly sweet pink brine? It’s pickled I think but doesn’t have the fermented flavor of like kimchi. Anyone know what this is? I’m obsessed with it and wanna know if I can make it or maybe find a place in Korea town that sells larger quantities. Thank you!

Just pickled cabbage. Not sure there is a name for it. Probably very easy to make. Water:sugar:vinegar=1:1:1

Pickled Korean radish and cabbage. I make it all the time for my kids. I usually use a little beet juice for coloring.

  3. dongchimi, a type of “white” kimchi
color comes from a purple radish variety
