📝 INGREDIENTS
• ¾ cup ripe bananas, mashed (about 225g)
• 2 large eggs
• 120g (½ cup) Greek yogurt
• 2 tbsp milk (for added moisture only if needed)
• 60g (⅓ cup) coconut sugar (or any preferred sugar)
• 60ml (¼ cup) olive oil or melted coconut oil
• 1 tsp vanilla extract
• 1 cup (120g) fine whole wheat flour
• ½ cup (50g) almond flour (or ground almonds)
• 1 tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• 1 tsp cinnamon (optional)
• 60g (½ cup) chopped pistachios (or any preferred nut)

❃ PROCESS ❃
1. Preheat Oven
Preheat your oven to 175°C (350°F). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
2. Mash the Bananas
Mash the bananas until smooth and transfer to a large bowl.
3. Mix Wet Ingredients
Add the eggs and coconut sugar to the mashed bananas. Whisk vigorously until the mixture is light and frothy. Stir in the Greek yogurt, oil/butter, and vanilla extract. Mix until smooth and well combined.
4. Prepare Dry Ingredients
In a separate bowl, combine the whole wheat flour, almond flour, baking powder, baking soda, salt, and cinnamon. Fold in the chopped pistachios.
5. Combine Wet and Dry Ingredients
