  1. I figured out that trick a few years ago, let the steam cook the tops of the eggs. Glad to see someone who knows more about cooking than me confirming my idea wasnt so silly.

  2. I've been doing this for decades. I prefer low heat and no water myself. A little closer to over medium, but work great in a breakfast wrap. Also easier to melt cheese on them at the same time.

    I break them yolk side down on the wrap and spread it around a bit. Good to the last bite.
