Dirt Wings! Spot I grew up with, J. Timothy's Tavern in CT, coined the name/process as far as I'm aware. How they do it is fry, sauce, fry again, then sauce. Caramelizes and gets a pretty unique flavor.
We just left the final sauce to dip to keep em crispy. We also did an initial fish sauce marinade cause why not. Omitted all salt aside from what was is in the fish sauce.

Looks great. I avoid this method at home bc I hate the mess but really wanna get a grill that has an attached burner so I can fry outside. Then it’s dirt wings everyday
