First timer here at a starter and have yet to make bread…. Is this considered doubling/is it ready??? This starter is 2 weeks old and takes nearly 12 hours to get this size…. Please help.

    It’s ready for discard and I’d feed it again after or put it back to sleep in the fridge. I made English muffins with my discard and they turned out fabulous!

    Doubled 3 days in a row? Not yet.

    Is this a 1:1 starter? 12 hours is too long if so.

    Doubling in 12 hours after a 1:1:1 feed? Not ready.

    Once it’s doubling (or more) with a 1:1:1 feed in 4-6 hours, and does so for 3 or more days, then you can bake with it. Give it more time.

    Do not use the float test as others have recommended. It’s a myth.

    What is your feed ratio? I typically do:

    20g levain

    100g bread flour

    20g rye or whole wheat or a mix

    120g water

    I mix this together at night and within 8-9 hours it has doubled or even tripled in size and is ready to use in the morning.

    I have had the best results when the starter 1) has larger bubbles happening near the surface 2) the surface, at its peak, has a bit of a convex to it 3) consistently doubles in size within 4-5 hours of feeding

  11. I prefer mine to double in four hours for a healthy active starter
