  10. Low-key, after you bake that potato and cooked that steak. If you deglaze the pan a bit to loosen the fond; I would then smash the potato on the pan (before cut, just squish it (like on the cutting board or with smth flat) and add oil or butter to make the “top and bottom” of the potato crispy then continue the condiments.

    Basically Im trying to infuse what could be the gravy into the potato. But I don’t mind char bits. If that’s not for you; I’m just another stranger voice.

    More advice is appreciated
