
I followed Grant Bake's recipe step by step, but I extended the bulk fermentation to 8 hours instead of the recommended 3 hours, because at 3 hours she still hadn’t doubled in size. Additionally, I left the dough uncovered to proof in the fridge overnight per following the instructions he gave.
