Ukrainian Borscht Recipe

    # Ingredients:

    * 6 medium-sized potatoes
    * 300g pork ribs
    * 2 small beets
    * 1 onion
    * 1 carrot
    * 3 garlic cloves
    * 100g cabbage
    * 100g cooked beans
    * 2 tbsp tomato paste
    * 3 liters of water
    * 2 tbsp vegetable oil
    * Salt, pepper, and bay leaf to taste
    * Fresh dill or parsley for serving
    * Sour cream (optional but highly recommended)

    # Instructions:

    1. **Prepare the broth:**
    * In a large pot, bring 3 liters of water to a boil and add the pork ribs.
    * Skim off any foam that forms on the surface.
    * Reduce the heat to low and let simmer for about 40-50 minutes to develop a rich broth.
    2. **Prepare the vegetables:**
    * While the broth is cooking, peel and cut the potatoes into cubes.
    * Grate the beets and carrots.
    * Finely chop the onion and cabbage.
    * Mince the garlic.
    3. **Cook the potatoes:**
    * Once the ribs are tender, add the diced potatoes to the pot.
    * Let them cook for about 10 minutes.
    4. **Sauté the beets:**
    * In a frying pan, heat 2 tbsp of vegetable oil.
    * Add the grated beets and cook for 5 minutes, stirring occasionally.
    * Add the tomato paste and a few tablespoons of broth from the pot.
    * Simmer for another 5 minutes until the beets soften and the flavors meld together.
    5. **Sauté the onions and carrots:**
    * In a separate pan, sauté the chopped onions until translucent.
    * Add the grated carrots and cook for another 5 minutes.
    6. **Add everything to the pot:**
    * First, add the sautéed onions and carrots to the pot.
    * Then, add the cooked beets.
    * Stir well and let it cook for another 5 minutes.

    * Add the shredded cabbage, cooked beans, and minced garlic.
    * Season with salt, pepper, and a bay leaf.
    * Let everything simmer for another 5-7 minutes.
    * **Let it rest:**
    * Turn off the heat and let the borscht sit for at least 15-20 minutes to allow the flavors to develop.
    * **Serve and enjoy!**
    * Ladle the borscht into bowls, add a dollop of sour cream, and sprinkle with fresh dill or parsley.
    * Serve with rye bread or garlic pampushky.
