He usually requests a shape like a square or triangle but today hit me with fire truck. I said I’ll try my hardest kid!
Tartine country loaf recipe: – 200g levain (50/50 wheat and white all purpose flour) – Mix with 700g warm water and 900g of white all purpose and 100g wheat; Let sit for 40 min – Sprinkle 20g salt on top, add 50g water and mix well with hands; Let sit 40 min – 4 stretch and folds 30 min apart – Fermented a couple hours longer until I liked the jiggle – Split dough in two (second half of dough was used to make cinnamon raisin bread) – Rough shape (just folding corners in and flipping over to make a rough ball, then using bench scraper to “push” the bottom edge of the dough in) and bench rest for 30 min – Final shape (folding bottom half up, then the sides inward, then the top down to make a sort of envelope. Then flipping right side up and using my hands and tension to pull/roll into a tighter ball) and flip into a bowl with a floured tea towel. Cover with towel flaps – Refrigerate overnight – Preheat oven at 500F for an hour with Dutch oven with lid off and also in the oven. Heavy cast iron skillet on bottom rack to prevent the bottom of the bread from burning – Flip out of bowl, dust with flour, score loaf while cold, pop into Dutch oven, cover. – Drop temp to 450F, bake for 20 min with lid, 20 min with lid off
