🍳 Full Recipe: The Ultimate Carnivore Bagels
Ingredients:

1 cup (8 oz) cottage cheese, blended smooth
1 ½ cups (6 oz) shredded mozzarella cheese
2 tbsp cream cheese, softened
3 large eggs, separated
2 tbsp beef gelatin powder
2 tbsp finely ground Porq Panko (or any pork panko)
½ tsp Redmond Real Salt or sea salt
Optional: crispy, golden bacon bits baked into the surface

Instructions:

Preheat Oven: Set your oven to 350°F (175°C). Grease a silicone bagel mold or line a baking sheet with parchment paper.
Blend Cottage Cheese: In a blender or food processor, blend the cottage cheese until smooth.
Prepare Dry Ingredients: Mix beef gelatin, pork panko, and salt in a small bowl.
Melt Cheeses: Combine shredded mozzarella and cream cheese in a microwave-safe bowl. Microwave in 20-30 second intervals, stirring until fully melted and smooth.
Mix Wet Ingredients: Whisk egg yolks and blended cottage cheese in a large bowl. Stir in melted cheeses until fully combined.
Combine Dry and Wet: Add the dry ingredients to the wet mixture and stir until a sticky batter forms.
Whip Egg Whites: Whip egg whites in a clean bowl until stiff peaks form. Gently fold them into the batter in two batches.
Spoon Batter: Spoon the batter into the bagel molds or shape circles on the lined baking sheet. Smooth the tops with a spoon.
Add Bacon Bits: Sprinkle crispy bacon bits over the top of each bagel.
Bake: Bake for 20-25 minutes or until golden brown and firm.

  1. I wash my cheese cloth in my washer using my diy detergent then I rinse it well by hand and hang to dry

  2. I just made a carnivore bagel from Anita, over at Kerogenic woman and they were really good. I used ground Turkey and pork rind flour. They don’t have the chew you are referring to, however toasted up with cream cheese, they were really really good.

  3. Dave, cheesecloth is washable. Hand wash in hot water, with just a drop of dish soap. Rinse it out with more hot water. Hang it up to dry. Don't put it in the washing machine. Cheesecloth is too loosely woven to survive a washer.

  4. I wash my cheese cloth in the dishwasher after rinsing real well. I figured dishsoap residue is on every plate in away. I can be wrong. If you have a sewing machine, you can hem around the square of cheesecloth if necessary.

  5. Bagels are boiled before they are baked. Maybe try 3 steps with these. Bake them to help hold their shape, boil them and bake them again.

  6. I made some Keto bagels from a cookbook years ago, and they turned out amazing! They were expensive, though, since you had to use macadamia nuts. The flavor and texture were impressive, though!

  7. I usually wash and reuse my cheesecloth until I think it needs to be thrown out. The cheese bag aka nut bag can be hung over a bowl [maybe from cabinet knob?] and left to drain which will be a lot less messy. If you know you are going to make the recipe ahead of time, drain the cheese then and store in fridge until you need it.

  10. Yes. You can re-use cheesecloth–but wash it by hand. Use 2-3 drops of dish soap as a little goes a long way. Wring and rinse and repeat until the soap is gone. Hang to dry. Perfect.

  12. Yes, cheesecloth is washable. ☺️ You can hand or machine wash. Try putting it in a mesh bag for delicates. If you have a hand wash/delicates cycle that would be best.

  13. My method of folding (correct with spatula)…

    scrape the side of bowl,
    flip spatula (actually flipping your wrist) fold in towards center of bowl,
    quarter turn of the bowl and

    repeat

    scrape the same side of bowl,
    flip spatula (actually flipping your wrist) fold in towards center of bowl,
    quarter turn of the bowl and

    repeat until been around the bowl!

Regarding your question about the cheesecloth, you sure can use them again, and again.😉 What I do… Rinse them well, then hand wash them in a bowl of hot water, adding 1 teaspoon of baking soda, and white vinegar with a few drops of dish soap; Rinse well, and air dry.
