Rich, but delicious

  • Slow roasted medley cherry tomato
  • basil
  • burrata
  • grana padano

Mix all the above with a stick blender.

Fry up some guanciale, retain the fat and fry your onion.
Add the 'nduja and a but of pasta water and redice slightly..

Cook pasta, add to onion , guanciale and 'nduja mix.
Add cherry tomato sauce, mix well combining with pasta water to smooth out.

Serve with grated lemon rind on top.
