My first Cacio e Pepe

  1. I’m pretty sure it wasn’t the temperature that caused the lumps, but more likely I graded the cheese with a larger caliber. It still was delicious. What do you guys think?

    As for the lumps – as long as it tastes good and you (or your guests) are not to picky it’s all good! 👍🏼
    And since you figured out what caused them you’re gonna make it to perfection next time!

    My absolute favorite dish and so meticulous to make. I actually saw on one of my sciency sites that scientists discovered the best possible way measuring this that and the quantum state of the universe or something to make Cacio e Pepe. I think it was phys.org. Now I’m hungry again.
