Grilled Chicken Salad with Honey Balsamic Vinaigrette 🍗🍯🥗

Sharing a healthy and high-protein salad recipe with a delicious vinaigrette that brings it all together! Here I show how to get the perfect, juicy chicken breast and a great way to get a creamy vinaigrette. This is perfect for a meal prep or weeknight dinner. Enjoy!

Grilled Chicken Salad 🥗

Ingredients:
-5 oz. (142g) spring mix, roughly chopped
-1 large (180g) chicken breast, butterflied
-1 medium onion, thinly sliced
-2 roma tomatoes, small diced
-1/2 cup shredded carrot
-other optional vegetables (diced cucumber, bell peppers, mushrooms, etc.)
-50g roasted chickpeas
-50g roasted edamame
-salt and pepper
-olive oil for cooking

Instructions:
-prepare all of the salad ingredients as above
-add mixed greens to a salad bowl and top with all of the fresh ingredients
-heat a pan on medium-high heat; add 2 tbs olive oil
-season the chicken with salt and pepper and sear until internal temp is 155F; rest for 10 minutes
-lower heat to low and prepare dressing as directed below
-add chicken to salad and top with additional toppings
-toss with vinaigrette right before eating

Honey Balsamic Vinaigrette 🍯

Ingredients:
-1 tbs minced garlic
-1/4 cup olive oil
-1/4 cup chicken stock
-1/4 cup balsamic vinaigrette
-1 tbs hot honey
-1 tbs maple syrup
-1 tbs Dijon mustard
-juice of half a lemon
-1/2 tsp salt
-1/2 tsp black pepper

Instructions:
-add minced garlic and chicken stock into pan used to cook chicken; deglaze and set pan liquid aside
-add all ingredients above including pan liquid into a container, shake well, and set aside until ready to use

*How to Store Properly for Freshness*
Place salad into an air-tight container and keep the dressing in a separate small container. Place a folded paper towel on top of the salad before placing on the lid. This keeps it fresh for an additional 2-3 days.
