135 – 4.5 hours from frozen

I eat pichana all the time, but usually cooked over a fire the traditional Brazilian way. I figured I would give Sous vide a try. Still new to sous vide and this is my second attempt at it. I got two pichana from Costco, scored fat and rubbed it in and quartered it. Threw this in the bath today for 4.5 hours. Took it out and seared it off over propane. Seriously so phenomenal!! Juicy and fork tender.
