I had so much fun making this chickpea salad! I didn’t follow a specific recipe but I’ll list what I used:

2 cans chickpeas (drained + rinsed)

2 red bell peppers, diced

1 cucumber, diced

1/2 red onion, diced

some fresh basil leaves

Juice from 1/2 a lemon

Splash of olive oil

Splash of rice vinegar

Salt and pepper to taste

This is very plant based of me but I love meat lol. I guess meat just didn’t find its way into my lunch this week, but that’s fine! I had fun and loved using my little divided container to add some snacks. Protein in lunch will have to come from my favorite yogurts and bars shown in the 2nd photo. Hope this inspired someone!

    Update – threw together a cucumber chicken salad. 2 cans of chicken, 1 cucumber diced, and some lemon dressing. I was worried I wouldn’t be satisfied without some form of meat so I swapped the carrots for some of the chicken salad 🙂 I usually don’t pack anything crazy filling because this is for a day in nursing school from 7am-12:15pm. Anyways, I like this better. Yay!

    I love chickpea salad! Would definitely need a larger portion for it to be filling, like your recipe would be three servings for me anyhow

    I love and make a chickpea salad that’s similar. I use green pepper instead of red and I add tomatoes and feta. Looks wonderful! I sometimes put it inside of a pita. Usually it disappears in days, even with a huge batch.
