    What I like to do with eggplant is throw it right in the damned trash.

    I liked to make lasagna using thinly sliced eggplant in place of noodles, but then my body decided that eggplant is dangerous, so I don’t eat it anymore. Salting it and letting it sit removes most/all bitterness, and baking it in the tomato sauce makes it so nice.

    Even if I could eat it, I now live in a place where most fresh produce costs a fortune, so I can’t afford it. Your dish looks very yummy, though.

    Eggplant parm. Cut into 1” rounds. Dip in flour, egg, then breadcrumbs and then pan fry. Stack them like lasagna after that or just put some red sauce and cheese on top. Matty Matheson has a video that’s pretty good.

    I use it as a substitute for pizza sauce in a Mediterranean style pizza. Pizza dough rolled out, grilled eggplant instead of pizza sauce, shredded mozzarella, chunks of feta cheese, artichoke hearts, Greek olives, and Roma tomatoes. Sometimes I add grilled chicken for protein.

    A restaurant near me sliced the eggplants super thin with a meat slicer, then air fried them, for their eggplant parmesan. It was the best I’ve ever had.

    I like baba ganoush & rice if it’s made with yogurt.

    Parmesan. Bread it, bake it, coat it in red sauce and cheese.

  7. i like to peal it, cut it in 1/2 inch slices, and wash it thoroughly. then…. throw it out and order a delicious pizza!

    Slice it, skewer it, brush with oil, add salt and pepper, and throw it on the grill. Super easy and hits the spot right out of the garden in summer.
