Got some prime New York strip from Walmart.
Dry brined for 12 hours.
Put it in the oven at 240 degrees until it hit 115. Rested for 20 minutes then seared on a cast iron at 650 degrees for 45-50 seconds each side.
Rested another 7 minutes until it hit 132 degrees internal.

Got significant gray band so I might just sear it 20 seconds next time

    Perfecto!! That lil gray is ok as long as there’s a crust and the majority of the middle is that nice medium rare

    Was looking good but wow the end product is very very rare. That looks a lot colder than 132 internal!

    Why wait 20 minutes before you sear?
    You can do that immediately, or maybe 5 minutes rest
