🥂 to Effortless Elegance.
Menu:
Tomato Bisque |
Ingredients:
• 2 lbs fresh tomatoes (Roma, vine-ripened, or heirloom), halved
• 1 tbsp olive oil (for roasting)
• Salt & black pepper, garlic & onion powder (to taste)
• 2 tbsp unsalted butter
• 1 medium yellow onion, diced
• 3 garlic cloves, minced
• 2 cups chicken or broth
• 1 tbsp fresh basil)
• ½ tsp dried oregano
• ½ tsp smoked paprika
• ½ cup heavy cream
• ¼ cup grated Parmesan
Instructions:
• Roast the Tomatoes:
• Preheat oven to 400°F
• Place halved tomatoes, garlic, and onions on a baking sheet, drizzle with olive oil, and season with salt & pepper
• Roast for 25-30 minutes until soft and slightly charred.
• Simmer:
• Add the roasted tomatoes, garlic, and onions (plus any juices from the pan), broth, basil, oregano, paprika, garlic and onion powder and pepper.
• Bring to a boil, then reduce heat to low and simmer uncovered for 20 minutes.
• Blend:
• Use an immersion blender (or carefully transfer to a blender) and blend until smooth and creamy.
• Finish with Cream & Cheese:
• Stir in heavy cream and Parmesan. Let it cook for 5 more minutes on low heat.
• Taste and adjust seasoning.
Artisan Bread |
Ingredients:
• 3 1/4 cups all-purpose flour
• 1 teaspoon salt
• 1 teaspoon instant yeast
• 1 1/2 cups warm water (about 110°F)
• 1 teaspoon sugar (or honey, optional for slight sweetness)
Instructions:
• Mix the Dough – In a large bowl, whisk together the flour, salt, and sugar. Add yeast to warm water then stir and set aside (yeast is ready when it’s foamy on top)
• Add water to dry ingredients mix until a sticky dough forms. Cover with plastic wrap or a towel and let it rise at room temperature for 1 hour until doubled in size.
• Repeat stretch and fold method twice after letting dough rise for 1 hour (2x)
• Preheat & Shape – Preheat your oven to 450°F (232°C). Place your Dutch oven inside while it preheats. Meanwhile, lightly flour a surface, shape the dough into a ball, and let it rest for about 30 minutes while the oven heats.
• Bake Covered – Carefully place the dough into the preheated Dutch oven (parchment paper makes this easier). Cover and bake for 30 minutes.
• Bake Uncovered – Remove the lid and bake for another 15 minutes to achieve a crispy golden crust.
• Cool & Serve – Let the bread cool for at least 30 minutes before slicing to allow the crumb to set.
This bread is simple yet delicious, perfect for pairing with tomato bisque!
