Aubergine is amazing in most things but my top favourite way is aubergine fritters.

I made chicken tofu and eggplant potstickers for the superbowl yesterday! it was a clean out the fridge situation and turned out great. I diced and salted the eggplant before throwing into the food processor, then dumped it straight onto some paper towels to squeeze the water out. then mix with the other fillings and seasonings and wrap!
also, moussaka!

Imam bayildi – eggplant stuffed with tomatoes and onions
Baba ghanouj – dip made from mashed roasted eggplant with lemon and tahini, I like to add a bit of strained yogurt for creaminess
Now you have me craving eggplants in midwinter 😭

I stir fry chopped eggplant with onions and curry seasoning. And have it with scrambled eggs and potatoes. It’s a classic south asian breakfast meal.
