We are back with another wonderful video in collaboration with the Milano Cortina 2026 Winter Olympics. We meet farmer Edeltraud who shares her recipe for Schlutzer, or mezzelune, ravioli-type filled pasta with a distinct half-moon curve. She fills them with ricotta and spinach and sprinkle some pungent fresh cheese called graukase, along with some chives. Delicious! Here’s her recipe:

For the dough:
500g 0 flour
2 tablespoons rye flour
1 tablespoon corn oil
a pinch of salt
2 eggs
120ml warm milk

For the filling:
400g ricotta
300g cooked spinach
30g chives
salt

To serve:
butter
graukase cheese
chives

Buon appetito!

  1. the word Schlutzer comes from schlutzig which means slippery in a way… like a wet bar of soap… the rye flour gives this "slippery" mouthfeel to the pasta 😊

  6. I love the large “gray area” of blended cultures in the north. That ricotta with the chives! I am in heaven! I keep my chives growing right outside my front door to use. This ravioli look delicious. God bless, Edeltraud! Thanks for another great episode.

  7. I really wish that in America we respected the ways of the past more… sometimes perfection isn't about progress or speed, but repetition, recognition and retainment. ❤
