Herb-Crusted Chicken Drumsticks paired with Parmesan & Herb Butter Orzo with Roasted Cherry Tomatoes
Ingredients:
For Herb-Crusted Drumsticks
6 chicken drumsticks
1/4 cup grated Parmesan
1/4 cup breadcrumbs (panko for extra crunch)
2 tbsp fresh basil, chopped
1 tbsp parsley, chopped
1 tsp garlic powder
Salt and black pepper to taste
2 tbsp olive oil
Instructions:
Preheat oven to 400°F (200°C).
In a bowl, combine Parmesan, breadcrumbs, basil, parsley, garlic powder, salt, and pepper.
Brush drumsticks with olive oil, then roll each drumstick in the breadcrumb mixture to coat evenly.
Bake for 30–35 minutes until golden brown and crispy, flipping halfway.
For the Roasted Cherry Tomatoes:
1 cup cherry tomatoes, halved
1 tbsp olive oil
1/2 tsp balsamic vinegar
1/2 tsp honey (optional for balance)
1/2 tsp salt
1/4 tsp freshly ground black pepper
1/2 tsp dried oregano (or fresh thyme)
Instructions
Preheat the oven to 400°F (200°C).
Toss the halved cherry tomatoes with olive oil, balsamic vinegar, honey (if using), salt, pepper, and oregano.
Spread them out on a parchment-lined baking sheet.
Roast for 15–20 minutes, until they are slightly blistered and caramelized.
For the Parmesan & Herb Butter Orzo:
3/4 cup orzo pasta
2 cups low-sodium vegetable or chicken broth
1 tbsp unsalted butter
1 tbsp olive oil
1 small shallot, finely minced
1 garlic clove, minced
1/4 cup grated Parmesan cheese
1/4 tsp salt (adjust to taste)
1/4 tsp freshly ground black pepper
1/2 tsp lemon zest
2 tbsp fresh basil, finely chopped
1 tbsp fresh parsley, finely chopped
Heat butter and olive oil in a pan over medium heat. Add the shallots and sauté until soft (about 2 minutes).
Stir in the garlic and cook for 30 seconds until fragrant.
Add the orzo pasta and lightly toast it for 1 minute, stirring constantly.
Pour in the broth and bring to a gentle simmer. Stir occasionally until the liquid is absorbed and the orzo is tender (10–12 minutes).
Remove from heat and stir in the grated Parmesan, lemon zest, salt, and black pepper.
Fold in the chopped fresh basil and parsley.
