40% hydration extra thick cut for some curry ramen

If anyone needs the recipe for a quick and hearty curry ramen recipe it’s simple. Pretty much I just follow the recipe for Japanese curry in the roux box, but use about half the vegetables and I cut them very small, same with the meat. And then I double the water, and I put in the appropriate amount of better than bullion chicken paste and let it simmer till the meat is falling apart and then add the roux. It should be a luxuriant but soupy broth. I only top with ajiitama but that’s totally optional.
