Chicken Enchiladas with massive green salad
For the wrap I used home made egg white crepe:
113g carton egg whites
5g gelatin
5g psyllium husk powder
Whisked together until froty and fried like crapes. You have to spread the batter on a pan with spatula. Cook for 2min per side. Flip when the edges start to curl.
I made also a version without psyllium husk but with 10 g of gelatin instead.
