A little under 2 hours at 130 and then pan seared. I don't know if I'm being overly critical but I feel like something looks off? Taste is good.

    I did do an ice bath before pan searing because I didn’t realize I ran out of the good oil and had to use bacon grease at lower temps.

    Looks great! It’ll be a little more tender if you cut it 90° in a different way, across the grain. I did the same mistake a few weeks ago so don’t feel bad.
