Did you cut any corners on the recipe? In a recipe like this, you “proof” the yeast by putting it in water with a few drops of the honey and look for it to activate with a little bit of a foam on the surface.

Editing to add: I just saw in another comment you stated you used gluten free flour. If that is how you would like to continue, I’d recommend finding a bread recipe formulated specifically to be gluten free. It’s pretty easy to turn an enriched dough vegan, but not nearly as easy to switch it to gluten free. ymmv

If you’re looking for an oatmeal honey loaf, I HIGHLY suggest using the King Arthur Vermont whole wheat oatmeal honey bread (yes it’s a mouthful). It’s absolutely fantastic, and their recipes are extremely reliable. Also, I’d recommend using a scale for measuring if you aren’t already. It makes measuring so much easier and more consistent.
If I can offer some u solicited advice, get the book Beard On Bread (https://books.google.com/books/about/Beard_on_Bread.html?id=P-PAjALjruUC&source=kp_book_description) read it and work through the first handful of recipes. It’s a reverent look at the art of bread making and he teaches you how to really feel the dough to make sure you’re doing it right along the way. It’s beautifully written and unlocks the curious joys of breadmaking.
People will say making bread is chemistry, but in my mind it’s really biology. You want to make sure that your yeast is having a party when you make your bread. Yeast loves warm temperatures, hydration and complex sugar! Yeast will tell you it’s happy by making carbon dioxide, hence the rise and the proofing. Give your yeast the time, liquid and food it wants and it will reward you with great bread! You got this!

I’d like to make a suggestion as someone who is also very new to baking.
Start with a standard white loaf. Get used to measuring, mixing, and working the dough. A simple dough is easy to make and handle.
Having bread recipes fail can be really disheartening. A simple recipe will give you that sense of accomplishment while letting you practice.
I’d also check your yeast. Get a small bowl of room temperature water, add some sugar and some yeast. If there is no foaming after 10 minutes, then you should get some new. Your pics look very reminiscent of my first loaf that I made with yeast that was over two years out of date.

I mistook it for a shortbread biscuit at first. In all seriousness, I did not make an edible loaf of bread until my third attempt, and I had a few more after that which went in the bin rather quickly. Even now, two months in, my loaves are still very basic. It is only natural. You will improve with every loaf that you make. You might benefit from a different recipe for now. Ensure that you are using strong flour.

youtube is a great resource. i suggest Chainbaker if you want to learn a lot about bread making. it’s definitely a process that improves with more and more practice. you’ll get there!

I think you’re better off trying a simple white sandwich loaf first, before attempting any variations.
John Kirkwood’s videos walk you through the process – like the one linked below. If you follow this *to the letter,* delicious bread will result.
And I echo the other comments here saying get a scale. Measuring by volume is always worse than by weight, for everything – but especially baking.

Yay you had a go! The first one is the hardest. No loaf is a failure all loaves are a lesson. I’ve been making yeast raised sandwich bread for years, recently had a go at sourdough, my first one went in the bin I didn’t even want to feed it to the wildlife hahaha! I’m gradually improving, doing something a bit different every time but still pretty much depending on my yeast bread🤣which of course went through the same process but a long time ago

You can make bread crumbs out of this.
Just crumble / grind them in a grinder. Toast in a pan, add seasoning to taste and box it in an airtight container.
