More heat on your pancetta. It needs to be slightly browned. Premix your cheese and egg mixture. Temper it with pasta water. Add your drained pasta. Don’t add eggs or cheese over active heat. Only use residual heat.

Thereβs a lot going on here, but Iβll stick to the most basic advice and this applies no matter what sauce you use. You are overcooking it. The reason itβs breaking apart like that is because itβs too soft and isnβt able to retain its shape. Follow instructions until al dente, but if you do like it softer, do an extra minute after al dente instructions. Donβt go more than a minute more.

Your carbonara is not perfect, but it doesn’t look so bad. I don’t know why others are saying eggs are overcooked, I don’t have this feeling from the pic. It is true that the bacon should be more crispy, but I like it this way too. I would totally enjoy eating it
