Maybe port? That’s tough

5 or 10yo Madeira, Medium-sweet/Medium-rich style (Bual or a Tinta Negra at a either sugar level).

I don’t know anything about sweet cheeses. I’ve had cheeses with fruit but never with chocolate or toffee!

Port, Madiera…maybe a straw wine like a Mullineux & Lee.

when pairing wine with sweet cheeses, make sure your wine is sweeter than the cheese.
and port seems a good deal.

Not wine, but a very high abv liqueur such as absinthe. Pour liberally over the cheese, ignite, and when reduced to cinders buy some proper non-novelty, non-disgusting cheese.

I’d suggest a Port or maybe a Sauterne, but those cheeses wouldn’t appeal to me..
