Add the following to a crockpot:
1 cup onion, carrot, celery, lentils, & red bell pepper (chopped)
2 cups sweet potato (cubed)
6 cups chicken or vegetable broth
Seasonings:
1 tablespoon minced garlic
1 1/2 teaspoons cumin
1 teaspoon curry powder
1 teaspoon Tumeric
1 teaspoon cinnamon
1 teaspoon paprika
1/8 teaspoons nutmeg
Cook on low for 8 hours OR low for 4 hours.
Then add : 2 1/2 cups of fresh spinach and 1/4 cup lemon juice
Put the lid back on and unplug crockpot! Let sit for 30 minutes!
Serve with garlic toast! Top with a dollop of sour cream or mozzarella cheese! Enjoy!
