Mercimek Corbasi
(Lentil Soup)

1 cup of lentils
1 onion
1 carrot
1 potato
1 tablespoon of butter
1 teaspoon tomato paste
1 teaspoon paprika paste
1 teaspoon dried mint
1/2 teaspoon salt
4 cups water
Olive oil

Cook for 30 minutes until lentils are soft then purée. Serve with mint and fresh lemon.
