Full written recipe – Lemon Coriander Soup

Prep time: 10-15 minutes
Cooking time: 10-15 minutes
Serves: 5-6 people

Ingredients:
CABBAGE | पत्ता गोबी ¼ MEDIUM SIZED
CARROT | गाजर ½ NO.
FRENCH BEANS | फ्रेंच बीन्स 10 NOS.
CAPSICUM | शिमला मिर्च ½ NO.
PANEER | पनीर 100 GRAMS
FRESH CORIANDER | हरा धनिया SMALL BUNCH
WATER | पानी 1.5-2 LITRES
VEG STOCK CUBE | वेज स्टॉक क्यूब 1 NO.
OIL | तेल 1 TBSP
GARLIC | लहसुन 2 TBSP (CHOPPED)
GINGER | अदरक 1 TBSP (CHOPPED)
GREEN CHILLI | हरी मिर्च 2 NOS. (FINELY CHOPPED)
WHITE PEPPER POWDER | सफेद मिर्च पाउडर A LARGE PINCH
SUGAR | शक्कर A LARGE PINCH
LIGHT SOY SAUCE | लाइट सोया सॉस ¼ TSP
SALT | नमक TO TASTE
CORN FLOUR | कॉर्न फ्लोर 4-5 TBSP
WATER | पानी 4-5 TBSP
FRESH CORIANDER | हरा धनिया
LEMON JUICE | नींबू का रस OF 1 LEMON
SPRING ONION GREENS | हरे प्याज़ के पत्ते A HANDFUL (CHOPPED)
Method:
Add all the veggies into a chopper & chop them into fine dices, you can also do it with the help of a knife but this way is more convenient.
Cut the paneer into fine dices & keep aside.
Take the coriander bunch, trim the stalks & chop them finely, transfer into a bowl & set it aside.
Next, chop the fresh coriander leaves & keep it separately.
Add water into a stock pot & add the stock cube, stir well & bring it to a boil, this step is optional if you don’t have ready veg stock available, you can substitute it directly with hot water but this will add more flavour to the soup.
Set a wok over high flame, add oil & let it get hot.
Add garlic, ginger, green chilli, coriander stems, stir well & cook over high flame for a few seconds.
Next, add the stock or hot water, stir well & bring it to a boil.
Then add the chopped veggies, white pepper powder, sugar, light soy sauce, salt & paneer, stir well & cook for 2-3 minutes.
Add corn flour & water in a separate bowl & mix well to make a slurry, then add the slurry into the soup while stirring it continuously until the soup thickens.
Add the chopped fresh coriander, lemon juice & stir well, then taste & adjust salt if required, you can also add more lemon juice if required.
Lastly add spring onion greens & your comforting & delicious lemon coriander soup is ready.

    I don't have Orange carrot so i used the red one. Didn't have stock . I also didn't find safed mirch. Made without it .
