Frittata Recipe By What shall I Cook
Ingredients:
8 large eggs
1/4 cup milk or cream
1/2 cup grated Parmesan cheese
1 cup cherry tomatoes, halved
1 cup baby spinach, chopped
1/2 cup bell pepper, diced
1/2 cup onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh basil, chopped
1 tbsp olive oil
Salt and pepper, to taste
Optional: 1/2 cup crumbled feta cheese
Instructions:
Preheat your oven to 375°F (190°C).
In a large bowl, whisk together the eggs, milk or cream, Parmesan cheese, salt, and pepper. Set aside.
Heat the olive oil in an oven-safe skillet (preferably cast iron) over medium heat.
Add the onion and bell pepper to the skillet and sauté until they are soft, about 5 minutes.
Add the garlic and cook for another minute until fragrant.
Stir in the cherry tomatoes and spinach. Cook for a few minutes until the spinach is wilted.
Pour the egg mixture over the vegetables in the skillet, making sure it is evenly distributed. If using, sprinkle the crumbled feta cheese on top.
Cook on the stovetop for about 2-3 minutes until the edges start to set.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is fully set and slightly golden on top.
Remove from the oven and let it cool for a few minutes. Garnish with fresh basil before slicing and serving.
