Ingredients
3-4 tablespoons olive oil
1 celery stalk, diced
1 onion, finely chopped
2 carrots, peeled and diced
1 pound ground beef
5-6 garlic cloves, grated
1 bell pepper, diced
1 cabbage, shredded
1 (15 oz) can tomato sauce
1/2 cup of rice (arborio or carolina)
8 cups chicken stock
parsley as garnish
The Spices:
1 Bay leaf
1/2 teaspoon crushed red pepper flakes
1 and 1/2 teaspoons salt or to taste
1/2 teaspoon freshly ground black pepper
1 teaspoon dried crushed oregano
1/2 teaspoon dried mint
1 teaspoon dried dill
Serve with:
feta
olives
bread
Instructions
Heat a Dutch oven or a large pot over medium-high heat. Add the beef and season lightly with salt and black pepper. Cook until browned and then transfer the beef to a plate.
Add the olive oil, bell pepper, onion, celery, and carrots and cook over medium heat for 7-10 minutes until softened.
Add the garlic and cook until warmed through and fragrant.
Add the cabbage, beef, tomato sauce, rice, and the spices. Pour the stock into the pot and bring to a boil.
Reduce the heat to medium and simmer for 20 minutes until the cabbage wilts and the rice is fully cooked.
Taste and adjust the seasoning if needed. Garnish with parsley and serve.
Notes
Vegetarian Option: Substitute the ground beef with plant-based protein or beans such as chickpeas or lentils. You can also add extra vegetables like zucchini, mushrooms, or bell peppers for more depth of flavor.
Orzo Substitute: If you prefer, you can substitute the rice with orzo pasta for a different texture and a quicker cook time. Just be sure to adjust the cooking time accordingly, as orzo cooks faster than rice.

Made it today! Delicious! I love mushrooms, so I used both, a pound of ground beef, and a few baby bellas. Also used a red bell pepper, a few beet tops (stems and leaves), and added Japanese-style short-grain rice. Put fresh mint in the end – don’t know where to get a powdered one. Got a bit enthusiastic with hot red pepper flakes, so I had to put sour cream into my bowl. Perfect for a cold winter day in New York! Many thanks!
