Skirt steak is one of those cuts that almost tastes different depending on how it’s cut.
Not sure about the science behind it but I think it’s because it’s a thin cut and when it’s cut with the grain it becomes tough and chewy, and you end up taking in all the flavor before you’re done chewing…..if that makes sense
