This is an excellent Winter warming soup to end Soup Week in the February Freezer Challenge. Its been a great week. My freezer is actually full with a whole other weeks worth of soups which will help me stay on my budgets for this month.
Recipe:
1 whole Butternut Squash, peeled, de-seeded, and diced into roughly 1 inch pieces
Olive Oil
1 cup Carrots
1 cup Onion
1 cup Celery
2 Stock Cubes, I used Vegetable
1.7 litres of boiling water
Spices to add:
1 Tbls Paprika
2 tsp Turmeric
1 tsp Cinnamon
1 tsp Ginger
1 tsp Mixed Spice
Salt and Pepper to taste
half tsp coriander
half tsp cumin
quarter tsp cayenne, you can add more or leave out at your preference.
