Pea and Mint Soup

Welcome back to Soup Season and for part 11 I’m making pea and mint soup.

Way back before the pandemic, we used to have an office in central London and opposite the office was a Pret-A-Manger. Every Tuesday was soup day at Pret and once a month, the soup of the day was Pea and Mint.

I’m adding an extra level of fabulousness by serving mine in bread bowls because why dip your bread in your soup when you can pour your soup into the bread!

• Olive oil and butter
• ½ onion – finely chopped
• 2 sticks celery – finely chopped
• ½ fennel bulb – finely chopped
• 3 small potatoes – chopped
• 1 garlic clove – grated
• Fresh thyme
• 500g frozen garden peas
• 1 litre vegetable stock
• Roughly 1 heaped tablespoon fresh mint – chopped

I’m using my @savuerselects enamelled cast iron ‘saucier’ pan, which I’ve placed onto a medium heat.

Add a glug of olive oil and a knob of butter and once that’s melted throw in the onion, celery, fennel and potatoes. Stir and gently sauté for 5 mins. Stir in the grated garlic and fresh thyme, pop the lid on and let the whole lot sweat gently for 8 minutes.

Stir in the peas and pour in the vegetable stock and let it bubble away for 15 mins. Turn off the heat and place the lid on and let it sit for 5 minutes. Stir in the fresh mint and again, allow it to sit for 5 minutes more then blitz with a hand-blender until smooth.

  1. I love this chanel ❤❤ I will definitly try this one. We have a thursday tradition in sweden where we eat pea soup with pork, and pancakes for desert (dessert?) I dont like our version of it so I am very very happy to try another sort.
