When I cut watermelon for myself, I cut just short of the rind, leaving a thin sliver of transitional buffer before the peel. A little pre-peel greatly reduces my joy. It tastes a bit sour and bitter, and the texture is harder. It disrupts the perfect soft juicy sweet concentrated flavor for me.
Anyone else?
I then peel off that layer as well and eat it, but separately, because it’s not as good.

Thank you for using the proper pan. I see far too many people just using the bottom of the sink when doing fruits and vegetables. It makes me sick to my stomach knowing dish washers and prep teams are notorious for not cleaning properly at close. Not saying all but the kitchens I’ve experienced it’s been the case. So again thank you
