    1. Dry brined it the day before
    2. Set oven temp to 275F until it hit 110F
    3. Hot stainless steel pan on high
    4. Seared for 40s on one side
    5. Flipped steak and turned down heat to medium, threw butter and thyme and basted for 45s
    6. Let rest for 10 mins
