Also (embarrassing to say, but…) kind of my first time cooking a proper meal for myself – being in my late 20s and still living at home, I'm the last one in from work every day so cooking never falls to me… and back between school and getting a job for the first time, I suffered severe depression and basically did nothing with my life for 18 months so I never really… learnt? how to cook?

    Odd seeing my name in the recipe title haha.

    I started in March last year. It definitely has improved my skills and confidence. Cooking and cleanup used to be a chore but now I look forward to cooking cause it’s going to be a good result.

    My friend who is a great cook didn’t understand my excitement about finally being able to make my own delicious meals. I grew up with mostly processed foods, very few home made meals.

    One of my biggest wows was my first shrimp spaghetti meal. It’s something I’d only have at restaurants and never made shrimp myself and I was like this was better than restaurants and a bigger portion of shrimp.

    Single as well and much less food waste and I’m probably spending less cause I was doing quite a bit of takeout and fast-food.
