  1. Yes, instant pot boiled eggs, same timing as Jess. I'm a Miracle Whip girl. Additions are usually red onions, just a little mustard, celery seeds, dill(if I have fresh), paprika, s&p. Actually don't eat much egg salad anymore – am mostly plant-based – but it was one of my favorites and I do indulge from time to time.

  2. To bulk up protein and fiber add mashed chickpeas. Lots of vegans sub chickpeas for eggs in this type salad. Yummy, healthful, and stretching a dollar. Love y'all! 🌱πŸ₯° (personal note: Aaron Taylor's mom in Clark County, IN made the BEST egg salad I've ever tasted…Proustian memories…πŸ₯Ή)

  3. Celery, diced olives, dill, garlic, mustard, pickles or relish, RAISENS! CUBES CHEESE!….any combination. Raisins are my favorite add in. πŸ˜ŠπŸ˜―πŸ˜‰β˜ΊπŸΈ

  4. Here it is common to add a bit of curry powder to the eggs instead of the paprika (works really well with chicken salad and potato salad as well). Love the hot sauce idea! We don't eat much egg salad, usually it's boiled eggs sliced on bread.

  5. I have made egg salad hundreds of times as it is a cheap lunch. I have found that they peel the easiest if you put your eggs into a pot of boiling water – instead of putting water and eggs in at the same time.
    I also hold the egg in my hand while chopping it, so I don't have a mess.
    I've only ever put onion salt and pepper in mine. So I'll have to try your version!

  6. I don't know why I've never put bacon in my egg salad. I will have to remember to do that. I do like celery in mine because I like a little more texture.

  7. We add pickled cucumbers (chopped into tiny cubes) to our egg salad. I should really try your mayo recipe…

  8. Peeling eggs is all in the technique of peeling! I peel farm fresh all the time with no issues.

    Crack the egg…all the way around the egg and then start peeling from the larger end of the egg where the air cell is. Once you get a feel for getting under the membrane…they peel so easy!! The trick is to start from that end, because the air cell is there.

  9. Mayo: I use thistle oil mixed with about 2 tablespoons of very good olive oil for the taste. And Jess's recipe. The Mayo/Aioli is always very good.

  10. Looks great. I have never added bacon but do put in dill pickles. Love an egg salad sandwich. Will try making my own Mayo after I get some lemons. Hearts and flowers coming your way. β€οΈπŸ’

  11. That hot sauce reminded me of something I've wanted to mention before! I have never been a huge fan of really hot things – and I know that a few of your boys are the same – but I really love that fermented pepper taste you can only usually get from hot sauces. So a year or so ago, I started making my own "hot sauce" (lovingly called "not sauce" by me and my husband), where I ferment just sweet peppers and garlic for a week or so in a standard 3-4% salt brine (or a 3-4% salt brine where the liquid is coffee instead, it adds some nutty deepness!). I then blend up the solids with a bit of the brine. I just pour it in a bottle and put it in the fridge, and it lasts for months in there. It's SO GOOD on eggs!

    Talking about that whole growing up without eating something – my husband grew up never eating onions, because his dad was really allergic to them. I've been introducing him to leeks and pickled red onions and just standard chopped up onions in and on EVERYTHING now. And he loves it all. It's funny how some foods that just seem so standard to most people, can be a great revelations for others, once they finally try them!

  12. I love egg salad and hard boiled eggs in general. I don't have an instapot, but I found out that smoked eggs on the pellet grill or even in the oven is an easy way to "hard boil" eggs. I rarely have an egg that's hard to shell. I usually make my egg salad pretty much the same way that you do, but I do add relish and a little bit of mustard. This summer I had an abundance of peppers, so I made a LOT of pepper relish and my favorite is the hot version, that really adds a kick to the egg salad. πŸ˜‰

  13. I love chopping up onions celery and radishes. Sometimes snap peas too add to my egg salad. It’s great with a mug of tomatoes soup on the side.

  14. Had an egg salad sandwich last week because I had a craving and it's easy πŸ™‚ Eggs, mayo, mustard, salt, pepper, red onion, chives, and a dash of celery salt because I didn't feel like chopping the celery lol. It was delish πŸ™‚ One day I will try your homemade mayo recipe!

  15. Wide mouth pint jar…..1/4 to 1/2 very cold water…..add 2 cooked eggs …..shake shake shake…..shake it off. Pour into drainer….then peel. EASY peasy……and fast. Can use quart jar too….add lids. Fun with children

  16. I also add some chopped celery and celery leaves and sometimes instead of paprika, I will throw in a little bit of curry powder. It’s really really good but it’s not classic egg salad when I do that. Now I know a lot of people who chopped pickles or pickle relish into their egg salad, but I don’t really like that.
