Fajitas on point today. Pic is just before they got that good sear. @arnietex (tube and gram) has the best tex-mex pointers and highly recommend a follow on either or both platforms. Lots of “flippity flip flip”. Grill was hot around 500° with two zone set up. Got to internal temp of 145° before I pulled and rested. Per the man himself this is the ideal temp for tenderness, juiciness, and fall apart goodness. Always cut against the grain friends!
