Italian Escarole Soup (Zuppa di Scarola) Recipe
This classic Italian soup features hearty escarole, beans, pasta, and a savory broth. It’s comforting, nutritious, and perfect for a chilly day. Here’s how to make it at home:
Ingredients
2 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 can (14 oz) diced tomatoes (or 2 fresh tomatoes, chopped)
6 cups chicken or vegetable broth (homemade or store-bought)
1 can (15 oz) cannellini or Great Northern beans, rinsed and drained
1 bunch escarole, tough stems removed and leaves roughly chopped
1 cup small pasta (like ditalini, small shells, or elbow macaroni)
Salt and freshly ground black pepper, to taste
Grated Parmesan cheese, for serving (optional)
Crushed red pepper flakes (optional, for a bit of heat)
Instructions
Prep the Aromatics:
In a large soup pot, heat the olive oil over medium heat. Add chopped onions, carrots, and celery. Sauté until the vegetables soften, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
Add Tomatoes:
Stir in the diced tomatoes (with their juices) and cook for another 3-4 minutes to melt the flavors.
Build the Broth:
Pour in the chicken or vegetable broth. Bring the mixture to a gentle simmer. Add the beans and let the soup simmer for about 10 minutes, allowing flavors to blend.
Cook the Pasta:
Add the small pasta to the soup. Cook according to the pasta package instructions until al dente, usually 7-9 minutes. Stir occasionally to prevent sticking.
Add the Escarole:
Once the pasta is nearly cooked, add the chopped escarole to the pot. It will wilt quickly. Stir it in and cook for another 3-5 minutes until the escarole is tender but still vibrant.
Season:
Taste the soup and season with salt, pepper, and if desired, a pinch of crushed red pepper flakes for some heat. Adjust seasonings as needed.
Serve:
Ladle the soup into bowls. Sprinkle with grated Parmesan cheese if desired, and serve hot with crusty bread on the side.
Tips
Variations: Add a splash of lemon juice or a drizzle of extra virgin olive oil just before serving for extra brightness.
Protein Boost: For a heartier soup, add cooked Italian sausage or chicken pieces along with the vegetables.
Vegetarian Option: Use vegetable broth and skip sausage for a vegetarian version.
