Second cheese I brought back from Quebec. Very similar to but slightly stronger than a good Stilton with a slightly soft interior and crumbly exterior. The rind is very earthy and a little nutty in a good way. I think this one was a bit on the mature side but that is the way I like it. Goes really well with pralines and pears.
