I've posted this in comments before, but I love this breakfast and thought I would share in a post. I use Kirkland Signature stir-fry blend veggies and fill up my entire bowl with them (2.5 cups frozen, about 220g), cook them with salt and pepper and set aside, then do one spray of cooking oil and cook one whole egg and 2 egg whites, again with S&P. Add the veggies back in and then plate. 189 cal, 20g protein, 5g fat, 16g carbs. Could easily be doubled. I sometimes add in bacon crumbles for more cals/fat/flavor, too. Sometimes I'll do garlic salt. Sometimes I'll add in soy sauce…you get the idea – very easily edited meal.
