    Now just learn to get your pink center all the way out to crust without the over cooked ring.

    crust is A+ but personally would’ve cooked it a bit more of a higher temp to render the fat. as long as you enjoyed it tho 🙏🏽

  8. Amazing crust. Would prefer a more doneness to bring it to a mid rare though but honestly that looks so fucking good.

    VERY good crust. But, too rare. Needs like another 30 seconds to a minute in the oven at 500 degrees.

    Also, this meat is not well-marbled enough to be fantastic no matter what you do. It’s good, no doubt about that, but it’s not great. It’s missing 10-20% marbling to be fantastic.
