    I wouldn’t call people who do this line cooks. They work in a kitchen, because it’s an entry level job.

    On the subject of house knives, what happened to new hires not owning knife sets anymore? For the past couple years i haven’t seen a single guy bring their own knives to work. This baffles me because the first thing i was taught at culinary was to get a set of tools and keep good care of them. House knives are often shit too
